The School of Dairy Technology was part of the University of Melbourne's Institute of Land and Food Resources. It was based at the Gilbert Chandler Campus in Werribee. On 17 February 1967 the school was renamed the Gilbert Chandler Institute of Dairy Technology.

The original school of Dairy Technology at Werribee was started in 1939. Similarly to today, subjects taught included microbiology, chemistry and biochemistry and field staff of the department of Agriculture lectured in not only in milk and cream testing and grading and cheese making but also bread making, and accountancy.
